How to Make Sleepytime Cinnamon Scrolls

A Bedtime hug, disguised as breakfast.
Inspired by Sleepytime’s cozy, cosmic glow, these scrolls are pure comfort: swirls of cinnamon, stars, and sweet dreams.
You will need:
Note: A grown-up should handle all preparation and baking, but budding chefs can help – under supervision, of course!
For the dough
- 180 g full cream milk
- 7 g (1 packet) instant dry yeast
- 50 g caster sugar
- 60 g melted salted butter
- 1 large egg + 1 large egg yolk
- 360 g bread flour
For the filling
- 120 g salted butter, softened
- 200 g packed dark brown sugar
- 2 tbsp ground cinnamon
For the fruity tangy cream cheese icing
- 112 g block of cream cheese, softened
- 85 g icing sugar
- 45 g salted butter, softened
- ½ tsp blueberry powder
- ½ tsp raspberry powder
Method:
The Dough
If you don’t have a stand mixer, just use your hands — that’s what they’re for!
- Warm the milk
Pop it in the microwave until just lukewarm (about 30 seconds). - Make the dough
In your mixer bowl, add the warm milk, sugar, melted butter, egg, and yolk. Sprinkle yeast on top and mix for about a minute. Add the flour and mix on low until it starts coming together. - Knead it
Mix on medium for 8–10 minutes until the dough is soft and smooth (not sticky!). - Let it rise
Cover and leave in a warm spot until doubled — about 1–2 hours.


Rolling time
- Roll it out
Tip the dough onto a floured bench and roll into a 30 × 40 cm rectangle. - Add the good stuff
Spread on the butter, sprinkle the sugar and cinnamon, then smooth it all over. - Roll and slice
Roll it up from the short side into a log, trim the ends, and cut into 6 even pieces. - Second rise
Line a pan with baking paper, pop the rolls in, cover, and let them puff up for about an hour — they should be snuggled up together. Preheat oven to 180°C while they rise. - Bake
Cook for 20–25 minutes until golden and delicious. - Make the icing
Whisk cream cheese, icing sugar, and butter until smooth. Split into two bowls and mix a fruit powder into each for two shades of purple. - Swirl and sparkle
Drop dollops of each colour over the warm rolls, swirl into a galaxy pattern, and finish with silver sprinkles for stars. - Serve warm, with big smiles and extra napkins!
